The Ethiopian coffee ritual takes the participants through the entire coffee preparation process. She will wash the beans, and then start a fire in a small open roasting furnace.

The washed beans will be put into a small pan with a long handle and held over the fire. The woman preparing the beans will shake the pan back and forth, like an old-fashioned popcorn maker. This keeps the bean from burning. Some people have described the sound of the shaking beans as similar to shaking coins in a tin can. Once the beans are roasted, the preparer takes the pan and walks around the room, filling the room with the enticing aroma of freshly roasted coffee. Experiencing the sounds and smells is an important part of the ritual.

The next step in the Ethiopian coffee ceremony is to grind the freshly roasted beans. In restaurants, they may use an electric grinder to speed up the process. Traditionally, the beans will be ground in a small tool called a mukecha (pronounced moo-key-cha). The mukecha is a very heavy wooden bowl. The beans are poured inside, and then crushed with a zenezena, which is a wooden or metal stick that is used in an up and down motion, rather like a mortar and pestle.

The ground coffee is then put into a traditional clay pot called a jebena (pronounced jay-ben-ah). Water is added, and then the pot is put over heat until the coffee boils. The scent of the boiling coffee again fills the room, tempting the senses of all the participants of the ritual.

Coffee prepared in the Ethiopian coffee ritual is then served in small ceramic cups resembling the small cups you see in Chinese restaurants for tea. The cups are arranged on a tray very close together, and the coffee is poured from one cup to another in a single pour from the pot. This is a very important step, even if some sloshes onto the tray. If the server poured each cup individually, the coffee grounds would get mixed up with the liquid, resulting in gritty coffee. With the single pour method, the coffee remains free of the sediment.

Once you’ve taken your first sip, you’ve witnessed the full life-cycle of making coffee, from washing the raw beans, through roasting, grinding, and boiling the coffee. If you’re in a restaurant, the ceremony usually ends here. Traditionally, second and third servings are often prepared as well. Each serving has its own name: the first serving is called Abol, the second serving is called Huletegna, and the third serving is called Bereka. Once you’ve reached this stage, you have completed the Ethiopian coffee ceremony.

When I was six years old, my granddaddy would take me and my twin brother to work with him. Granddaddy worked at night as a security guard, so it was no trouble at all for him to let us go to work with him. And it was just the three of us, so needless-to-say, my granddaddy let us go nut! That started a fire that still burns today. My granddaddy introduced me to the greatest drink ever. And still every time I take a drink of coffee, I think about those special times. But, back then, I drank coffee because grown-ups drank it and mom would not let us drink it because it wasn’t good for us. I drink for different reasons, now. It really isn’t as bad for you as you think.

I’ve done a lot of research on coffee, and drinking it is not as bad
for you, at all, much to my surprise.

what would you say if I told you there was a natural elixir that could lower your risk of diabetes, colon cancer, or Parkinson’s disease? you would think I was crazy, right? Its true.

In fact I know he didn’t, he chose coffee because he liked it, but he’s almost 90 years old now, and I would like to think that his excessive coffee consumption had a little to do with him still being around, but in any case, I’m still glad he is.

The beans are then roasted to various degrees which cause them to change physically and in the tastes they produce. Finally, the coffee beans are grinded down into a fine consistency that is commonly known as coffee grounds, and packaged and shipped to destinations around the world where consumers can buy and brew coffee grounds to make coffee in commercial, hospitality, institutional, and residential settings. Some people prefer to grind their own coffee beans before brewing them for coffee. Packaged coffee beans that have not been ground can be purchased in stores and ground using the grinding mills that are made available in most of the stores selling them, but also with grinding machines in the home.

The two most commercially grown species of the coffea plant that produce the coffee beans used to make the coffee that the world’s population consumes, are Robusta and Arabica. Gourmet coffee is made from the top tier coffee beans from the arabica coffea plant. These top tier arabica coffea plants are typically grown at very high altitudes (above 3000ft) with ideal soil and climate conditions. The coffee beans produced have fuller flavors, are more aromatic, and have less caffeine in them than other varieties of coffee beans such as Robustas. The coffee beans of arabica coffea plants grown at lower altitudes are still noted among consumers as having richer flavors than the flavors produced by Robusta coffee beans, but it is only the top tier arabica coffee beans that are considered to be Gourmet, and thereby from which gourmet coffee is derived.

Coffee bean grounds and coffee beans that have not been grinded down need to be stored in air-tight containers and kept cool in order to protect them from losing their flavor. The containers that coffee is typically sold in are not the most ideal for storing coffee for a long period of time. When you arrive home after purchasing coffee grounds at the store, consider transferring the fresh coffee grounds to appropriate storage containers to extend its shelf life and full flavor.

Coffee can be brewed in many ways such as boiling, pressuring, and steeping. Most of us brew our coffee using automatic coffee brewing machines and percolators which use gravity to pull hot water through coffee grounds where the hot water mixed with the oils and essences of the coffee grounds empties into a liquid holding container below. Filters are used to keep coffee granules from being emptied into the carafe or liquid holding container from which the brewed coffee can then be served from because most people do not want to drink the coffee granules. Coffee granules can be very bitter once the flavor able oils and essences have been removed through the brewing process. Plants and flowers love coffee grounds though for anybody who is looking for a greener alternative of what to do with coffee grounds after brewing instead of just throwing them in the trash.

Of course, Gourmet coffee beans are only the beginning to creating a truly gourmet coffee experience for many gourmet coffee drinkers. Some people are quite content with drinking their gourmet coffee black, without adding anything like milk, creamer, sugar or other sweeteners or flavorings, to their coffee. While many others want to enhance their gourmet coffee and drinking experience with tasty additions like milk that is whipped into a froth, sweeteners, and mixing in other flavors like chocolate, vanilla, cinnamon, and mint, to name just a few. Big name coffee chains sell a wide variety of gourmet coffee with different tasty additions and flavors to appeal to gourmet coffee lovers. However, brewing gourmet coffee at home is usually much cheaper, and you can add what you want to your coffee to satisfy your refined, gourmet tastes.

Coffee, a drink cherished by many; a drink avoided by others. Tea, its main rival, seems to offer a bounty of better health benefits; a drink for the New Agers and those who want to escape the decadence of the brown, caffeinated drink. The fact stands that tea can only be as beneficial as its preparation, which in some cases may have as much sugar as a can of soda. To understand coffee, one must understand the core value of tea: that the brewed leaf itself is the only healthful component. Everything else is decadence.

To that, the coffee bean itself contains a number of benefits to health. But the culture of coffee, like the tao of tea, contains a lot of excess trimmings. Espresso machines, for example, produce a highly concentrated form of ordinary coffee. And then the all-consuming vice: sugar. Along with cream, sugar waters down the benefits of coffee, where it turns the brew into drinkable candy. But all of this remains unchanged from tea. The bean is the important part.

Caffeine can wreak havoc on the nervous system, but that does not make it synonymous with coffee. Different kinds of coffee (all prepared differently) will yield varied levels of caffeine content. Serving size also comes into play. To those sensitive to caffeine, the obvious alternative can be found in decaffeinated coffee. But such an alternative could downplay the positive affects of the drink. Coffee is rich in the B vitamin niacin; and in recent studies has been shown to have antioxidant-like effects on the body by eliminating free radicals. As a caution, these benefits only arise with a balanced drinking habit. Too much cream and sugar can prove to be detrimental, while too much coffee poses many long-term hazards. While coffee may provide the B vitamin niacin, it in turn restricts the body from other vitamins. And depending on the brew, coffee contains acids that have been linked to stomach ulcers. Symptoms like these may sound off-putting, but they exist only in the long run for an abusive drinker. A daily cup poses no threat to the average person.

And a cup can be prepared several ways. The standard method used by drip machines yield a good amount of caffeine and the filter traps out most of the volatile fatty acids in the bean. The use of a French press, with its lack of a filter, will keep the acids in the brew (though some claim it helps the coffee to taste better). The pressurized water in an espresso will not keep out most of the volatile acids, and it will also increase the caffeine content. All told, for those who refuse to switch to decaffeinated, instant coffee granules contain less caffeine and fatty acids. Compared to their quality cousins, instant coffee should satisfy the balanced drinker. This along with less cream and less sugar, can make for a risk-free casual cup of coffee.
