Review: Wolfgang Puck Vienna Coffee House K-Cups for Keurig

Our ongoing series of Wolfgang Puck K-Cup reviews continues today with their Wolfgang Puck Vienna Coffee House K-Cups. While billed as a blend that had Chef Wolfgang going back to his Austrian roots, a quick gander at the Wiki article for Vienna coffee reveals that it’s a “traditional cream based coffee beverage made by preparing two shots of strong black espresso in a standard sized coffee cup and infusing the coffee with whipped cream (as a replacement for milk and sugar) until the cup is full. Then the cream is twirled and optionally topped off with chocolate sprinklings”. Hmm… ok, so this K-Cup should possibly taste like an extra bold with hints of cream & chocolate? Let’s find out.

Upon brewing, we got strong earthy notes and hints of molasses. While the foil label claims this is an extra bold medium roast, we’d have to disagree. This one seemed dark roast all the way both in aroma & moreso flavor. Acidity was strong with quite a sour bite at the beginning which quickly mellowed throughout the aftertaste.

Flavor was strong and lived up to its extra bold billing. We noted lots of smoky taste reminiscent of a double-shot of ristretto while we got faint notes of dark bittersweet baker’s chocolate on the finish. Body was full of dark browns and yielded reddish notes when held to a light source. Mouth feel was more on the oily side but satisfying nonetheless. The only thing missing to complete the Vienna coffee experience was any hints at creamy notes, but to be fair, we’re hard-pressed to recall of any recent dark roasts that had creamy notes unless we, well… added cream to it. As for aftertaste, lingering smoky notes remained.

Aroma – 8 – Strong & earthy with smoky notes, just like we’d expect from a double-shot of espresso.Acidity – 8 – Rather strong with sharp bite at the forefront but quickly mellows through the smoky aftertaste.Body – 9 – A palette of dark browns with reddish notes when held to a light source.Flavor – 10 – We still think this is more of a dark roast. Strong smoky taste, faint notes of bittersweet dark chocolate in the finish. Quite pleasing overall.Mouth Feel – 7 – Rather oily which reinforces our dark roast beliefs. Smoky notes linger in the aftertaste.Coffee Drinker – Suited best for those who prefer dark roasts. Don’t be scared off by the medium-roast label on the packaging, this K-Cup has quite a good kick of strong flavor.

Overall Rating: 92 – Exceptional

We think Van Houtte’s got some hidden gems in their Wolfgang Puck K-Cup line-up which have yet to be discovered including these Wolfgang Puck Vienna Coffee House K-Cups. If this is indeed a medium roast, then they’ve done wonders with the extra bold process. We went into this review thinking we’d end up with a mild medium with only “hints” of extra-bold flavors but were pleasantly surprised to discover quite the opposite. These K-Cups have got quite the satisfying kick and should be enough to please even the most discerning dark roast drinkers. By far one of our favorites in the Wolfgang Puck line-up so far.

The Ethiopian coffee ceremony is very important in the Ethiopian culture. The coffee ceremony will be performed when friends visit, during celebrations, or simply as a part of the daily routine. It is so important to how the Ethiopians view coffee that most Ethiopian restaurants will have the coffee ceremony performed for you at your table.

The Ethiopian coffee ritual takes the participants through the entire coffee preparation process. Whether you are witnessing the ritual in a restaurant or lucky enough to participate in someone’s home, the green coffee beans will be brought to your table by a woman. She will wash the beans, and then start a fire in a small open roasting furnace.

The washed beans will be put into a small pan with a long handle and held over the fire. The woman preparing the beans will shake the pan back and forth, like an old-fashioned popcorn maker. This keeps the bean from burning. Some people have described the sound of the shaking beans as similar to shaking coins in a tin can. Once the beans are roasted, the preparer takes the pan and walks around the room, filling the room with the enticing aroma of freshly roasted coffee. Experiencing the sounds and smells is an important part of the ritual.

The next step in the Ethiopian coffee ceremony is to grind the freshly roasted beans. In restaurants, they may use an electric grinder to speed up the process. Traditionally, the beans will be ground in a small tool called a mukecha (pronounced moo-key-cha). The mukecha is a very heavy wooden bowl. The beans are poured inside, and then crushed with a zenezena, which is a wooden or metal stick that is used in an up and down motion, rather like a mortar and pestle.

The ground coffee is then put into a traditional clay pot called a jebena (pronounced jay-ben-ah). Water is added, and then the pot is put over heat until the coffee boils. The scent of the boiling coffee again fills the room, tempting the senses of all the participants of the ritual.

Coffee prepared in the Ethiopian coffee ritual is then served in small ceramic cups resembling the small cups you see in Chinese restaurants for tea. The cups are arranged on a tray very close together, and the coffee is poured from one cup to another in a single pour from the pot. This is a very important step, even if some sloshes onto the tray. If the server poured each cup individually, the coffee grounds would get mixed up with the liquid, resulting in gritty coffee. With the single pour method, the coffee remains free of the sediment.

Once you’ve taken your first sip, you’ve witnessed the full life-cycle of making coffee, from washing the raw beans, through roasting, grinding, and boiling the coffee. If you’re in a restaurant, the ceremony usually ends here. Traditionally, second and third servings are often prepared as well. Each serving has its own name: the first serving is called Abol, the second serving is called Huletegna, and the third serving is called Bereka. Once you’ve reached this stage, you have completed the Ethiopian coffee ceremony.

Coffee Drinkers with Sensitive Stomachs Rejoice!

There is nothing more frustrating than having to cut back or avoid your coffee drinking because you may have stomach sensitivities. However, there is some good news for coffee drinkers out there with stomach sensitivities since they can now better enjoy their brew by sipping on a dark roast!

In a recent study done by the American Chemical Society, food chemists examined dark roasted coffee to find that it naturally produces a chemical compound that prevents cells in the stomach from creating excess acid that is often exacerbated by drinking coffee. If you have ever struggled with having a sour stomach after drinking coffee in the morning, drinking a dark roast instead may be the solution that you have been looking for. Of course, many sensitive stomached coffee drinkers also prefer cold brewed coffee, which has up to 60% less acid than traditionally brewed hot coffee. There are also coffees on the market that are labeled to be “stomach friendly”, where they are treated with steam to remove chemicals and caffeine that can often cause gastrointestinal discomfort. However, food chemists wanted to examine this issue even further to find out what chemicals in coffee caused a sour stomach and heartburn.

This research was done by taking extracts from two different coffee blends, one being light and the other being dark. These were also compared to the stomach friendly varieties of coffee that are steam treated. Each of the extracts showed to have a unique chemical composition, with varying amounts of other compounds, as well as caffeine.

When the extracts from these types of coffee were administered to human stomach cells, the cells increased their acid production. The one exception to the case was a compound in one of the extracts called N-methylpyridinium, which is a chemical naturally produced during roasting. It is not found in green coffee beans, but it begins to occur the darker that the coffee is roasted. This is actually a stomach soothing compound produced in dark roasted coffee, and scientific researchers are beginning to test a specialized blend of this compound for production.

This is fantastic news for anyone with stomach issues who still wants to enjoy their daily cup of coffee, especially since coffee has been proven to have such a large range of health benefits. Overall, it will reduce the risk of cirrhosis of the liver, stroke, Alzheimer’s, Parkinson’s disease, and even type II diabetes. Of course, you don’t want to let a little sour stomach get in your way of this healthy enjoyment, and experts recommend that you drink 2 to 3 cups of coffee per day for the greatest health benefits. If you are a coffee drinker that also happens to have a sensitive stomach, take care to choose premium dark roasts of coffee that contain the gentle compound that will prevent excess acid production in your stomach upon drinking. This is truly the best way to enjoy your cup of Joe on a daily basis while still being good to your stomach!
